Taste Matters

So I have an outdoor grow took some clones out a lil too early & the girls turned on me. Some them wound up producing some nice lil buds. The problem is after drying & trimming my wife & I sampled some & they tasted nothing like they smelled, is this somethin that I did wrong in the drying stage?? & if so how do I prevent it from happening w/ the rest of my harvest that didn't turn on me??....any response would be greatly appreciated....
