That will be very tough. You are trying to evaporate the moisture from the plant. With temps below freezing that moisture turns to ice. Do you have any way to get some heat and a fan on them?

I can get a fan on them-heat will be difficult. I am on solar power so electric heat is out. This will be taking place in a barn somewhere in Colorado at 7,700 feet elevation and it's already getting into the teens or low twenties every night. I wanted to dry them in the greenhouse while the other plants were finishing up but there won't be any room for the racks until they're totally cut down so they have to go in the attic of the barn for awhile.
