I've got a setup using this system, I used some 19mm or 3/4" metal (not rubber!) grommets to solve the problem. The hardest part was the mounting process (required a helper), but very please with the results. I put them just above the included 2" flooring insert and just below one of the factory...
that's the love and hate relationship i have with windows; the inevitable reload-it-to-make-it-faster cycle.
VS Code is a good alternative for Arduino development too, if you haven't tried it out. VStudio is pretty awesome already, so I wouldn't blame you for sticking with that.
Make sure you get a system that supports an encrypted file system and a full end-to-end-encrypted connection if you decide to remotely monitor. Especially if you're going to be storing 2 weeks worth of growing weed. ;)

Grab a dehumidifier with a drain line pump, run the drain line, set it to your desired range, sleep better. You can pick up some really nice units for under $200.
