We don't bother to thaw our brownies We eat them right out of the freezer. They don't freeze brick hard and are still easy to eat with a nice firm texture.

After I remove the solidified butter from the water I re-melt it and pour it into 4oz. plastic storage containers and store those in the freezer. That way we have several pre-measured 1/2 cup portions which makes measuring it into the cookies, or brownies, really easy.

Intake and Outake (or Exhaust) are both functions of your venting system. You can't have one without the other. Regardless of what type or how many fans you use, you will always have an intake and exhaust.

There are times that you need access to the reservoir, such as topping off or changing the solution or checking the pH or PPM. Having the tray sit directly on the reservoir makes that difficult.

No. You determine that by doing your research. That will give you a base to compare facts gained from actual experience with off the cuff opinions. Google is your friend.
