I have a small dark room for drying 50- 57% humidity on a meshed dryer rack should I use a fan on low or just let dry as they are.

I use a fan on low to blow air around the room just a small one though. Also don't have air blowing directly at drying buds will knock trichs off.

I aim a small 4inch usb fan towards the wall down by the floor. Just to keep some air movement going.

If you're blowing air on them then yes they will. Another way is to dry in the fridge inside of a paper bag. You can find a thread on this method called The Low and Slow method. It's how I dry and cure my harvests now.

how long does it take in the fridge and if I dry them out to quick with the fan when I put them in mason jars after drying can I put those humidity packs that are 62% humidity in the jars you rehydrate the buds to normal % without mold.

Yes you can do that I use the boveda packs to cure seems to help a lot with smoothness and taste. Around 2 weeks to dry in the fridge.
