Chicago Chef To Make Cannabis-Infused Edibles For Medical Marijuana Patients

Prominent Chicago chef Mindy Segal announced Tuesday she plans to create a line of cannabis-infused edible products for medical marijuana patients.

Segal, the owner of HotChocolate restaurant in Bucktown, has agreed to make a line of products for Cresco Labs, which plans to operate three cultivation centers in Illinois, according to an announcement by the company. Cresco maintains Segal is the first James Beard Award-winning celebrity chef to endorse products for the cannabis industry.

Her first products will include a line of chocolate brittle bars, granola bites, a chocolate drink intended to be served warm, and a ready-made mix with do-it-yourself instructions.

The edibles should be ready by late February with accurate dosages, according to Cresco.

"We've all heard the expression, 'It tastes like medicine,' but there's no reason it has to," Segal said in the news release. "With my recipes and Cresco's technology, we're developing this line of products to be consistent every time and absolutely enjoyable to eat."

The medical marijuana industry opened in Illinois last month, primarily serving middle-aged patients with one of about 40 specified chronic debilitating conditions such as cancer, HIV or muscular dystrophy.

Edible products were not initially available, because they are more complicated to make, but edibles reportedly have become more popular than the dried flower in some of the 22 other states with medical marijuana. The product remains illegal under federal law.

"Having someone with Mindy's name brand and credibility enter the cannabis industry says a lot about where this industry is headed," Cresco Labs founder Charles Bachtell said.

Segal's products are intended to be available for sale at licensed dispensaries across the state, and eventually in five additional states.
