Barramundi with Creamy Garlic Herb Sauce

Cook time: 1 hour
Serving size: 1 filet
Yield: 2 servings

Ingredients:

Barramundi

  • ¼ cup/60 ml MagicalButter
  • 2 (8 ounces/225g each) barramundi (Asian sea bass) filets
  • 1 teaspoon/5 ml Hungarian paprika
  • 1 teaspoon/5 ml Cajun seasoning
Creamy Garlic Herb Sauce

  • ¼ cup/60 ml MagicalButter
  • 1 cup/240 ml homemade chicken broth
  • ¼ cup/60 ml white wine
  • ¼ cup/60 ml heavy cream
  • 1 tablespoon/15 ml minced garlic
  • 1 tablespoon/15 ml lemon pepper seasoning
  • 10-15 fresh basil leaves,
  • 2-4 shallots, minced
  • Zest of 1 lime
How to:

Sauce

1. In a large sauté pan on medium-high, heat the MagicalButter for 30-45 seconds.
2. Add the shallots, and cook for 3-4 minutes. Then, add the garlic, and sauté for another 1-2 minutes or until it’s a nice golden brown.
3. Add white wine to deglaze the pan. Cook for 1-2 minutes, remove it from heat, and set it aside.
4. Into your MagicalButter machine, add the butter mixture, cream, lemon pepper, basil, and lime zest, and close the lid.
5. Press the Temperature button, and select 130°F/54°C; then press the 1 Hour/Oil button. That’s it!

Fish

1. In a large sauté pan on medium-high, heat your MagicalButter for 30-45 seconds.
2. Coat each fish filet with 1 tablespoon/15 ml of melted butter, paprika, and Cajun seasoning.
3. Sauté 4-6 minutes per side, or until the fish is cooked to your desired temperature.
4. Place your barramundi on a bed of spinach, and top with your Creamy Garlic Herb Sauce, serve and enjoy!
