Harvest and Storage 9,000' Rocky Mtns

(1)I have too many plants that have become ready for harvest at 1 time? any suggestions on how to keep them from over ripening? I put in room with no light and keep soil moist as I harvest 1 at a time, Is it ok to put in night cycle 24 hrs?
All Suggestions welcome!

(2) Long term storage?
