Fresh Herb Roasted Red Potatoes

Ingredients
¼ cup Magical Butter's fresh herb duck fat
¼ cup olive/coconut oil blend
8-10 red potatoes
4 minced garlic cloves
¼ cup finely-chopped basil
2 tablespoons finely-chopped fresh oregano
2 tablespoons finely-chopped, decarbed high quality flower
1 tablespoon finely-chopped fresh rosemary
2 tablespoons pink Himalayan salt
1 tablespoon fresh ground pepper

How To
Preheat oven to 325ºF.
Mix all of the ingredients (except the potatoes) in a bowl.
Put 2 chopsticks on the counter and place a potato in between them. This will let you cut the potato in slices without cutting all the way through.
Cut all of the potatoes into slices, without cutting them all the way through.
With your hands, rub the herb mixture on and in between the potato slices.
Put potatoes into a baking dish. Cover with aluminium foil and put into the oven.
Cook for 25 minutes.
Uncover and cook for another 15-20 minutes.
Take out of the oven. Plate and cover with herb oil drippings from the bottom of the baking pan.
