Magical Butter's Pumpkin Craisins Cookies Recipe

Pumpkin Craisins Cookies

½ cup Magical Butter's olive oil
1 cup roasted fresh pumpkin purée
1 cup AP Flour
¾ cup Sugar In The Raw
⅔ cup old-fashioned oats
1 tablespoon ground cinnamon
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon fine salt
¼ teaspoon ground allspice
⅛ - ¼ teaspoon cayenne powder
1 teaspoon pure maple syrup
1 teaspoon vanilla extract
½ cup craisins
12 ounces high quality white chocolate chips​

How To
1. Preheat oven to 325°F and position the rack in the center of the oven.
2. Use 2 heavy, large baking sheets lined with parchment paper.
3. Combine flour, oats, cinnamon, baking soda, salt and allspice in a medium size mixing bowl and stir until completely combined.
4. Combine sugar, pumpkin, oil, syrup and vanilla in a separate large mixing bowl and whisk together.
5. Gradually fold in dry ingredients with wet ingredients, about 1/3 at a time. Then add craisins and white chocolate chips, and combine completely.
6. Use a heaping tablespoon to measure out each cookie, space them about 1 inch apart, then cook for 25 - 27 minutes.
7. Place on a plate or cooling rack to cool and serve.​
