Mixing & cooking question

Ok so i got my hi brix kit my promix and my ewc's...

When cooking this mix.. are you suposed to cover it.. leave it open...

Do you mix once and completely eave it alone for the 30 days.?

Or do you mix it up every few days? Adding water as needed

Are we talking DBHB kit ? if so Yes Cover it and leave it alone for 30 days. you should
not need to add any more water for the 30 day cook. You should see condensation
under the lid inside the barrel as it cooks.
