And when and how best should I "prune" trim the bigger sun leaves?

The only thing I can guess based on the thin leaves, it is a sativas.

Only thing after is smell, if you can pinpoint that, it might be easier.

If it's an outside grow, no need to trim unless you are in a 70% or higher RH environment most of the time (to avoid white powdery mildew and bud rot later)
