So main question is, could I possibly run two cobs at 750ma running them in parallel. I'm aware of the thermal runaway but as I've read there are a few ways of avoiding this either with a buck converter or simply fuses. Would this be a possible option?
Parallel is your only option. The driver has too much current to run in series with those COB's. And the driver also doesn't have enough voltage to run in series. It will only work in parallel. Running in parallel solves all the problems because you only need about 36 volts from the driver when in parallel( instead of 72 volts). And the COBS will only have a max current of 750 mA.
