Why is this red?

This was purple flower, I had never seen this before, I wish I would have taken a better look before I processed, so I've had it in everclear for 30days
Went to infuse simple syrup and it's red or a deep purple
Is this normal?

I also wish I could go a non alcoholic recipe, any advice?

I'm new to all this and can use all the help I can get

It's the Anthocyanin (the purple color) being leached out of the plant cells by the alcohol. Should not cause any problems.

You can make a tincture with vegetable glycerin in place of the alcohol. I've been told it's not as strong but have never tried it personally. Here's a recipe that I bookmarked: Vegetable Glycerin Tincture

The purple color the fan and sugar leaves late in flowering is all the rage these days.

There is a long thread already started here on this message board with pictures of Purple flowers and plants. Last month the Maximum Yield magazine was the Cannabis edition and the cover is a beautiful photo of a purple flower.
