You can't make a good salsa without a bunch of beautifully ripe tomatoes, so no skimping on these juicy fruits! Not only are they tangy and flavorful, but they also carry some nutritional benefits you may not have known about. Per Organic Facts, "tomatoes can increase digestion, stimulate blood circulation, reduce-cholesterol-levels, improve fluid balance, protect the kidneys, detoxify the body, prevent premature aging, and reduce inflammation and related conditions," and that's far from an exhaustive list. Never think twice about tossing a couple of extra tomatoes into your batch of salsa.

This awesome recipe calls for a healthy dose of fresh cilantro, which you can pick up from any local food store or market. The herb is rich in Vitamins A and K, and quite low in calories. Nutrition And You says cilantro has "good amounts of antioxidants, essential oils, vitamins, and dietary fiber, which may help reduce LDL or 'bad cholesterol' levels in the blood."

Slammin' Salsa

Prep time: 1¼ hours
Serving size: ½-¾ cup
Yield: about 5 cups

Ingredients

  • ⅔ cup Magical Olive Oil
  • 1 cup red onion, chopped
  • ¾-1 cup fresh cilantro, chopped (add more at the end if desired)
  • ½ cup red wine vinegar
  • 3 tablespoons tomato paste
  • ½ green bell pepper, chopped
  • ½ yellow bell pepper, chopped
  • ½ orange bell pepper, chopped
  • 6 fresh plum tomatoes, chopped
  • 6-8 cloves garlic, peeled
  • 4-6 fresh limes, juiced (if you like more, use more!)
  • 1-3 whole jalapeño peppers (depending on heat preference), de-stemmed
  • 1 bunch green onion or scallions
  • Pink Himalayan salt and freshly ground pepper to taste
How-to

1. Place all the ingredients inside your MagicalButter machine, and secure the lid.
2. Press the Temperature button, and select No Heat; then press the 1 Hour/Oil button. (If your model does not have a No Heat option, you can run several consecutive Clean cycles instead, until you achieve the desired consistency of your salsa.)
3. After the cycle is completed, pour your Slammin' Salsa into serving bowls, and enjoy with your favorite tortilla chips, tacos, nachos, etc. ¡Ole!
