Green Goddess Gazpacho

Prep time: 10 minutes
Cycle time: 1 hour
Serving size: 6 ounces
Yield: about 5 cups

Ingredients

  • ½ cup Magical Coconut Oil
  • 2 large cucumbers, peeled, seeded, and coarsely chopped; then split into portions of about 3¼ cups and ¼ cup, the latter finely diced and set aside for garnish
  • ½ cup seedless watermelon or cantaloupe balls (or diced)
  • ½ cup assorted fresh herbs, loosely packed (I use basil, chives, mint, cilantro, and Italian parsley, coarsely chopped; plus ¼ cup finely chopped for garnish)
  • 2 scallions, coarsely chopped (white and green parts)
  • 1 piece (½ inch) fresh ginger root, finely chopped
  • 1 large clove garlic, coarsely chopped
  • ¼ cup plain low-fat Greek yogurt
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon jalapeño hot sauce
How-to

1. In a small bowl, stir together the melon, ¼ cup of chopped cucumber, ¼ cup of herbs, and salt. Chill it in the refrigerator for your garnish.
2. Place the remaining chopped cucumber, scallions, herbs, ginger, garlic, oil, salt, pepper, hot sauce, and yogurt inside your MagicalButter machine, and secure the lid.
3. Press the Temperature button, and select No Heat; then press the 1 Hour/Oil button.
4. When the cycle is completed, transfer the soup into a large, airtight container, and refrigerate it for 1-4 hours.
5. Introduce the watermelon or cantaloupe into the soup, and stir thoroughly.
6. In a small bowl, toss the parsley and ¼ cup of chopped cucumber.
7. Divide your Green Goddess Gazpacho evenly among 4 chilled bowls, finish with a flourish of diced cucumber and Italian parsley garnish, and enjoy!
