Jicama is another special ingredient "rooted" in this recipe that you won't want to skimp on. Originally from Central and South America, the sweet, crunchy, and nutrient-packed "Mexican yam" is served raw in slaw and other salads. Jicama contains copious Vitamin C, B6, iron, and potassium, which help maintain normal blood pressure and kidney health. The combination of napa cabbage, jicama, and cannabis will ensure you get your vital dose of veggies.

Napa Cabbage and Jicama Slaw

Cook time: 15 minutes
Serving size: ½-¾ cup
Yield: about 6 cups

Ingredients

  • 1 cup homemade Magical Mayo
  • 2 cups shredded napa cabbage
  • 1 cup jicama, grated
  • ¼ cup cilantro
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons local honey
  • 2 tablespoons Dijon mustard
  • 1-3 tablespoons Matouk's Hot Calypso Hot Sauce, to taste
  • 1 tablespoon sugar
  • 3 scallions, sliced
  • 1 carrot, grated
  • 1 small cubanelle pepper, julienned
  • 1 orange (juice only)
  • 1 lime (juice and zest)
  • ½ small onion, grated
  • Pink Himalayan salt and freshly ground pepper to taste
How-to

1. In a large salad bowl, whisk together the onion, mayo, Dijon mustard, vinegar, sugar, scallions, hot sauce, orange juice, lime juice and zest, and honey.
2. Toss in the cabbage, jicama, carrots, cubanelle pepper, cilantro, and salt and pepper to taste.
3. Cover and refrigerate your Napa Cabbage & Jicama Slaw, until you're ready to serve and enjoy!
