Day 38 since sprouting. Should I cut the yellow leaves at the bottom? Also should I top it or leave it grow. (Sorry the pictures are sideways)

So leaving them dry out allot isn't a bad thing?

I water it everyday when the soil is dry. Maybe I should add smaller amounts when watering. How long do you think until its ready to harvest, about 2-3 weeks?
