Bud smells like hay after harvest

My bud smells like hay/fresh cut grass after they dry. The plant is very pungent when i chop but they seem to lose their smell.

Dry closet is 50-56% rh, 65-70 degrees F. I have a box fan blowing air out to maximize dry time but also keep air moving.

Can someone tell me what the hell im doing wrong? My first batch didn’t smell any better even after a 3 week cure

Prolly drying too fast. Are the stems brittle after just a couple days ? And then what for cure? I try to never let them below 62% rh for cure

Not brittle at all. Some of the buds were actually too moist during cure. I make sure the bud stems bend and snap at resistance but not break off completely. Last batch dried for 7 days
