Help with low and slow

I have harvested two plants and put the short branches with buds in brown lunch bags and packed them in the crisper of our fridge. Probably 15 bags placed loosely in the crisper but pretty much filling it up.

I place an hygrometer into the crisper and it is reading 80% after 24 hours. Is this to be expected? The rest of the fridge is around 50%.

I fear 80% may be too high. I coulld be wrong and I am drying now as we speak also. I am air drying in a closed room with humidifiers and am shooting for a RH of 65% in the room.
