how to harvest one flower at a time

I have heard that bud matures at different times even on the same plant. It would seem that you should pick only the flowers that are ripe, as we do with grapes and apples. I have researched how to determine ripeness (what percentage of amber trichomes do you consider ripe) and would like to know a method of harvesting individual buds or groups of buds that are ripe with minimal harm to the remaining plant. Does anyone have experience with this method? I know it is not practical for large harvests, but mine is small.

I'd also like to know the consensus on harvesting half a plant and allowing the rest to mature farther. Like if two people wanted different highs from the same plant.
