Sautéed Spinach With Shaved Carrots And Scallions

Ingredients
2 tablespoons Magical Butter's olive oil
2 tablespoons Magical Butter
8 ounces fresh baby organic spinach
8 ounces fresh organic arugula
1 large peeled and shaved carrot
5 finely chopped scallions
2 cloves smashed garlic
2 ounces white wine
2 ounces homemade chicken broth
½ lime juice and zest
Pink Himalayan salt and fresh ground pepper

How To
Heat the olive oil for 30-45 seconds in a large heavy bottom sauté pan, on medium heat.
Then add butter and heat until butter bubbles.
Add carrots, scallions, salt and pepper, and stir constantly, cooking for 1-2 minutes.
Add the white wine and chicken broth to deglaze pan, and reduce to half volume.
Add arugula, spinach, lime juice and zest, salt and pepper, and cook for an additional 3 minutes, stirring constantly.
Remove from heat and serve.
