What is the organic soil comprised of? Is it from a bag you bought at a store, and if so what brand? Is it something you mixed yourself? If so, what's in the mix and at what ratios? Or is it something you dug out of the ground?
How much space do you have for your grow? How much floor space...

Beautiful plants! Those are some big stems and huge bushes in such relatively small pots...shows your skillz. I can't wait to see them after a few months in 25 gallon containers.
I've seen pictures somewhere on this site of very successful starts that way. I'd recommend seaweed extract in the water to help develop those roots quickly.
Wow looks like a great start! Some of the things I think you need to be careful of are pH and heat. Do you have any way to bring fresh air into the grow space and then to exhaust it out? You should probably hang a thermometer down to the height of the tops of the plants to monitor the temps...

At three weeks old they're probably too young to naturally preflower and show any sex. When the new leaf pairs aren't directly across from each other (that is, ,when the nodes start to alternate) then they are mature enough to show sex. When and if they show preflowers depends on the strain...
