Why is this so important and can I expect similar results with the use of non ph balanced water? I have lil over 250 plants growing (very well I guess) with non ph tested water..... just curious like a cat or somethin

I have 180 or so in soil and around a 100 in hydro 98% of all my plants are autos

Ph is critical for the plants ability to take in food. Too acidic or too much base locks these nutrients out.
If your soil is balanced, then it will act as a bit of a buffer to your water source. However, many growers use hard core synthetic fertilizers that are loaded with salts and things that can alter the ph of the soil. Flower pots compound the problem because these salts tend to build up. Adjusting the ph of these before feeding helps minimize the impact.
When growing outdoor in the ground, or in high brix, and complete organic , the issues of ph become much less of an obstacle.
Talking hydro or coco, then attention to ph becomes absolutely critical and proper checks are imperative with each and every feeding.

That is a huge number of plants, especially for a first grow! wow!
In hydro you want the pH to be in the range of 5.5-6.1 and in soil it must be between 6.3-6.8. As said above, working outside of these ranges can make expensive nutrients unavailable to the plants and deficiency issues can occur because of it.

pH is very very important, just like good light and nutes when the plants need em
