I've been growing in soil for about 2 years from clones just switched to DWC using seed, I've seen this term Pheno used in regards to seeds, what does it mean?

Its short for phenotype.
Basically it is the specific character traits that make the plant distinguishable.

A person could plant many of the same strain and one shows characteristics that separate it from the others of the same strain?
What would be the typical differences ?

You got it!, That's the idea.
From seed, even pure strains, and F-1 Hybrids, while for the most part are very consistent, will show some variation in phenotype, where as clones or cuttings are as close to exact as you can get.
