Barbacoa Mega Burrito

Ingredients

  • 3lbs Chuck Roast
  • 3 Bay leaves
  • 1 Large white onion sliced
  • 5 Cloves garlic
  • 1.5 tsp Ground cloves
  • 1.5 tsp Cumin
  • ½ Cup cilantro
  • ¼ Cup lime juice
  • 2 tsp Apple cider vinegar
  • 6 Chipotle chilies in adobo
  • ½ Cup beef broth
  • ½ Cup infused oil

 How To

  1. In dutch oven over medium heat, add oil, onions, add garlic and toss in roast.
  2. Brown roast on both sides.
  3. Add cloves, cumin, apple cider vinegar, and beef broth.
  4. Simmer for 3/4 hours until chuck if fork tender.
  5. Remove roast and shred it using two forks.
  6. Begin plating. We topped our burritos with cheese, pico de Gallo, rice, and beans. Create your own versions, Eat to Treat!
