Harvest half?

I want to know if I can harvest the bottom half of my tree and leave the top to mature? For some reason my trees buds are maturing faster than the top. And how many branches can I safely remove so I don’t shock the plant?
 
I’ve been getting an early experience with harvesting some. I had a wicked rain storm a few weeks ago that snapped a few branches beyond repair. So why not try my hand early at trimming, drying and getting them in to jars for cure.
They won’t be quality that early but it’s the process I’m more interested in (hands on) and the rest of that 1 plant is still fattening up :)

Bit concerned my open basement is 65F and humidity 70 when branches hanging the first few days.
I’m sure it will get worse when the whole crop moves down there.
Is this the time for a last minute dehumidifier hunt ?
 
I’m still running our dehumidifier and it fills in about 7 hours then shuts off. Just emptied it. It will be full in am. Basement is still like 60% RH. Wish it would cool off in the nordth country so we can run the furnace and dry they air.
