About 5-6 weeks from seedling , I've seen a lot of people topping their girls, when and how do I know when to do it to mine ?

I've only been here a few months lol but I topped all mine after the 2nd and 3rd nodes and have had no problems so far ..
My GG #4 topped once at the second node

Not it's not necessary it'll just keep ur plant shorter while possibly increasing yield is my understanding
