If it hasn't gone to bud yet, just prune it back to a manageable size. if you're in bud I guess take what you can get. But then again you could cut it back and let some of it ripen.

Every day of flowering the plant packs on more THC.
But if you have to harvest early, smoke it. Even leaf is better than no weed.
By multiple toppings you can grow a plant that looks more like a bush than the typical tall x-mas tree shape.
Usually you end up with the same yield by weight as an untopped plant. Smaller buds but more of 'em.
