Long story short, my "friend" that was supposed to water my plants while I was out of town didn't for about 12 days didn't. All leaves are dead but stalks are still nice and green. Plants were ready to start flowering and have been healthy up to this point. It's a soil grow and they are about 2.5' tall. Lavender kush. Will they come back without leaves or am I wasting my time? I do have other plants, these are the only ones ready to bud now though.

I doubt you can save them. Some plants you can cut back to almost nothing and they'll come back but I don't know if cannabis is one of them (kind of doubt it) and even if it is... Man, that would have to be stressful. Extreme stress tends to cause hermies.
