I have 3 issues that I am very worried about. I have attached pictures as well. Does anyone know what I need to do?
I think its a case of underwatering too.

Medium: Biobizz Coco Coir Mix
Lights: 2x San Light Q4W in 1m2
Strain: Green Gelato
Nutrients: BioBizz nutrients (Fish-mix, Bio-Heaven and Acti-Vera)

Issue1 - Purple stem from stalk to fan leaves. Not the stem itself.
Issue2 - Wilted leaves
Issue3 - Drooping leaves

How are your Temps? What about pot size - in my mind the pot sizes might be too small? I run DWC, so don't have a lot of knowledge on dirt grows.

Try mixing 1ml CaMg, 2ml Bloom, 2ml Gro and 2ml Vera pH'd to around 6.3
If the pot is dry now, pick it up so you can gauge when it's dry in future
If it is staying permanently heavy, leave more time between watering
Its very light in between watering. It was almost completely dry the last time I watered thanks to that I was away for 2 days but gave them lots of water before I left.

2 of them is actually not potted in the middle of the pot. Should I maybe repot?

Hope to god they wont die!! :D

Don't think I'd re-pot, you just need to nail correct feeding/water cycle in coco
The Goldilocks zone is simply don't water too often and don't let it dry out completely either
