Best bang for your buck in terms of efficacy (2.4 umol/j), quality (Quantum Boards), and light output (1500 umol/s) is this DIY kit: Horticulture Lighting Group HLG-600H Quantum Board V2 DIY Kit - 620 Watt

You would get better coverage with two of these in a 5x5 though: Horticulture Lighting Group 320 Watt XL Quantum Board V2 DIY Kit (with Samsung LM301B diodes)
I ordered the hlg 600h from LED grow lights depot and I must say that their service and advice they give is 5 stars.

I am really happy with the 600h and it's running now in my 4x4 tent.

The DIY kit is easy to assemble with a potentiometer to dim to 10%.

Also paint that drywall so it doesn't become a water sponge. GFCI is a good idea. Ground everything and run conduit or flex conduit. (just my opinion and not binding advice : ) )

Also good catch to those other guys catching the 1000W LED. Very few manufacturers offer 1000W LED or more and if they do its around $2K a light. You'll be fine with a HPS or CMH. Couldn't see your ceiling height but maybe 2 600w lights in each room would help spread light out to the walls because of the 5x5 and get less light burn.

HLG light would work well too. Might want to add side lights to really crush it though with 5x5 if you're only doing 1 light.
