Hello everyone I have transplanted my 1 week of veg plant to a bigger pot but during the process I saw a few root pieces on the soil that where cut of is that going to affect my plant?????

No, it won't harm your plant and may actually help it. If a plant is root bound when I transplant it, I cut vertically through the roots a few times with a box cutter to encourage growth into the new soil. This keeps them from circling around between the old and new.
