Is it better to use multiple pots, or would it be better to use one large container for say about 9 - 7 week to harvest plants?

One per container is the way to go. The plants will also benefit from starting in smaller pots and transplanting as needed rather than starting in a large container. If you're going to use a technique like ScrOG where you will be fixing the tops or stems you will want to be in the final size pot so you don't have to untangle your plants to repot. To do this you need to plan for how big you are planning to grow them- 1 gallon of container for each foot of plant is the conventional wisdom. Good luck!
