How dark does the room or space where you dry your plants need to be? Does it need to be 100% pitch black or just dark (like a room with the shades drawn or just no direct sunlight? And do you need to keep light off them as much as possible, like trying not to check them too much by turning the lights on?

Just keep them out of the light and try to keep temps on the cool side.
Darker that my ex’s soul incidentally which is pitch black! Or what Pennywise said is cool too
When it’s time to check you need to be able to see clearly to pick up any mold or funky stuff going on. But yes other than that keep them dark.

In my last 2 grows I dried in a windowless guest bathroom but this time I can't use the bathroom so I'm going to dry in my basement. I have shutters on the windows but it doesn't make the basement pitch black, so it's just dark. Is just dark OK or does there need to be zero light leak?
Dark is perfect - just keep air moving but not pointed at produce, the flip side of dark is that mold grows more easily in dark places. Definitely monitor the temp and rh... keep your eyes on that hygrometer and you will be fine.
