What should the humidity be at while curing in the mason jars and also after curing in the Mason jar what should humidity stay at

you want to keep burping until you get humidity down to aroud 62%
As long as it’s less than 70% RH then you should be free of the risk of mould. Most people dry to around 60%. Some like it dryer/wetter, but that’s up to you depending how moist you like it.
