I never harvest white pistils as a rule of thumb.
When she is finished flowering and building for you h3r pistils turn red and crinkle in.
Then I check trics.
As that is happening she will stop eating.
Is she still draining her pot?
If so she is still flowering.
I see white pistils aswell so I'd wait.
Did she have fans originally?
Seem to be missing a few.

I defoliated plenty of fan leaves. The buds are getting hard as a rock. She is rarely drinking water/nutes.

She is close then.
The fans are important for photosynthesis.
I don't remove any when I chop then they come off.
