Question about sweating buds

So I have seen threads about sweating buds in paper bags after hanging dry for a couple days after harvest.

The information I can't seen to find is whether or not to leave them on the stems while I do this or to cut all the buds off.

Any information would be great.

With stems on it will take longer.. but you can do it either way. It's primarily used to even out the moisture content which improves curing.
