I have some seeds that are 5 years old, will they still be good?

Only way to know is try, but most likely they are good

I've got 4 plants going right now from 5 year old seeds-I tried to start 6, 2 didn't pop,so you might try and start a few more than you'll end up needing.
If they all pop,either make more room,or thin the herd...

Probably. If you decide to pop them be ready to grow them when you do
