Not sure if I should cut them up or leave them whole. It will take forever to dry but properly better if I don't get mold.

Where are you currently hanging them to dry and what is the temp and rh?
Leave them whole. Put them into a brown paper grocery bag and put the bag in the refrigerator after writing the date down. Low (temperature) and Slow Drying is what some call this method of drying. It takes awhile but is worth it.
