Why do roots take so long to start?

In hydro cloners, I've read anything from 7 to 12 days to get roots started. Longer in rockwool.

My question, at least for aeroponic ez-cloner style machines is, WHY does it take so long to go from a stem hanging in water spray to having even tiny roots coming out? The plant has to figure out it was cut off and it has to start over?

Seems like even 7 days is an awfully long time for it to realize this.

Once roots come out though, it should really take off in growth!

I've got 5 clones that have been in my home made EZ-Cloner for a week, nothing at all growing yet. Ridiculous. Just cut another 10 tonight for it.
 
7-12 days isnt too bad for a clone to develope roots, considering that you get a free plant that you know is female. its faster than seeds.
ive had clones take up to 3 weeks to root. but thats in soil not an aeroponic set up.
