Pot size and veg time - Outdoors

No -not root bound at all. Two months veg time in my grow setup is often barely enough to fill out a plant for a ten gallon pot. At four months they definitely would be. The growth rate is obviously going to vary a lot depending on a lot of things, but in general an outdoor plant with real sunlight is going to grow much better and bigger than an indoor plant.
 
You can do it, but you'll be tending to them a LOT.
I have a couple in 25 gal. pots. They need water every other day - or more often. In 10 gal. you will probably need to feed or water them daily. The size of the plants will be greatly reduced with that size pot, but it sounds like that's what you want.
Four months from germination sounds about right to me for veg time.
