When do you know it’s time to harvest?

I’m a newbie & this is my 1st attempt at growing ANYTHING (other than my children). My question is when do you know it’s time to harvest??

You might get away with using your camera, if you have a good zoom on it you can zoom right in to see.
Even better if you have a macro function on it.

This is how I do it using my phone camera.
