The EC value should remain constant throughout the grow. EC is a measure of the nutrient salts in the water. The higher the EC, the more likely your pH is off, locking out nutrients. I believe you want your EC between 1 and 2 if you can control it.

if i use deionized water with the needed fertilizers will there be any problems?

dont use deionized water. tap water with chlorine bubbled out or if water is too hard half tap half ro.
