What to do when plants are not ready to harvest at the same time?

I have two plants that are almost ready for harvest but it looks like one will be ready approx a week before the other. Not sure what to do. I have a small closet for veg and a 3x3 tent for flower. I don't really have any other place I can give the plant a few days of darkness and I was originally planning on cleaning the tent and then drying the flower in it. Any suggestions on what I could do?

if necessary, you can chop one plant and start a fridge dry til the other is ready.
7 days is not that far apart as a harvest window. i mono-cropped other plants within that window.

Wait. A week is not a big deal for the first plant to continue.

Are you sure they'll finish that close together? Two to three weeks starts pushing it.
