As @Bill284 mention many grower are not fans of defoliation; that being said, start with the big fan leaves near the bottom 1/3 of the plant.
I would start with the one on the left in the image. The object is to remove the big leaves so the light can penetrate the canopy and get to the bud sites.

Give them a couple days after you trim her then switch to flower. IMO.

How much should I defoliate from this big girl?

Like Bill and Tok mentioned, there are many different answers to that question. I lollipop a week before flipping and then take off the short branches once stretch is over (around 21 days).

Since you already flipped I would just take enough to make sure airflow is good through the lower branches and then snip the weaklings after stretch. I hate trimming larf so I want as few buds down below the canopy as possible.

Well so far they're taking after your dad's friend (if he's a male).

It’s definitely a pistil. Both plants i was unsure of have them now. Overnight they appeared
