Help with end process

When they were ready to chop the smelled as they should now I hung them to dry and cured them in the jar the smell isn’t there anymore what could I be doing wrong for smell to completely disappear

Could be lots of things what was rh going into jars?how long did you hang em? What was temps and rh where you hung them?

We’re hung in a dark room away from walls with a fan at 21 degrees for 6 days then burped in jars for a month till humidity was down to 55%
