How many plants under a 600w MH/HPS?

Depends on how big you are growing them. Realistically anywhere from 1 to 16 depending on your growing style.

I used to grow 9 per 600 in 3 gallon pots. Now I grow four per light in 7-10 gallon pots.

A 600 watt light covers about 4x4 area max ( a fair bit less IMO) - so it's just a matter of fitting your plant(s) into the available space- whether it's one plant or 16.

I was gonna try to grow 3 more autos with my 600w but I have more cfls if needed because one of the strains is incredible bulk
