Soil pH control?

Control meaning if you need to lower or raise it. We have natural spring water I use. Today when I checked the soil ph it was just about a 7. So was the water on tap from the spring. We had lots of rain & I think that's why it's higher than normal. I noticed some yellowing leaves down low. That's what made me check it.
 
I read bone meal will raise the alkaline & I thought blood would go the other way to acidic side. But I may have read it wrong.
 
Sulfur is a much better acidifier. Blood and bone meal are amendments meant to add 'N', 'P' and 'Ca'.
