Looking great pw! I want to see your set of knives! I saw a video of a guy breaking down a prime rib of beef. He ended up with beef ribs and some steaks. I think me and a buddy are going to try to break it down one day soon, smoke some ribs, sear some steaks, drink some beer! Smoking meats is my other favorite hobby. Goes great with a blunt

Thats a badass shift man... wake up a little early oh well... you beat traffic both ways and you are back at home by the time people are going for lunch.. and you have your entire day to do anything... and you can stay up until 8-9 and still have plenty of sleep.
